Abbacchio A Scottadito (marinated lamb cutlets in English) is another popular dish in Rome's Lazio region. The dish's name literally means 'little lamb à la burning finger' in the Romanesco dialect because the meat is eaten with the hands and is traditionally served piping hot! In restaurants they are usually cooked on charcoal, but there is nothing stopping you from barbecuing or grilling them. The dish uses simple Roman seasoning and the meat should be marinated for at least 30 minutes to be able to enjoy the full flavour.
