Fiori Di Zucca Fritti (English: Fried Courgette Blossoms) is a speciality antipasto dish from Rome, which uses the flower part of the courgette/zucchini. You may have actually never seen this part of the vegetable before, as often it is discarded, but it tastes delicious! The flowers are a bright yellow in colour and should really be used on the same day as they were bought, because they do perish quickly. These yummy little morsels are quickly deep fried in batter, after being filled with some of Italy's best loved ingredients; a courgette blossom of course, but also mozzarella di bufala (though sometimes ricotta or goat's cheese is used) and anchovies.
